Shirataki noodles are one of the healthiest foods to consume, they have almost no calories & carbs,* yet they are fun to eat and filling! The noodles are made from the konjac yam plant and are great for stir-fry Asian dishes and spaghetti. We have been pre-diabetic for over a decade, in our journey to stave off Type 2 Diabetes, the discovery of shirataki noodles has been a great help. Shirataki noodles are championed for low carb, keto, paleo, and gluten-free diets. As a healthy pasta substitute, we greatly prefer shirataki noodles over, for example, zucchini noodles.
Upon opening a package of shirataki noodles you will notice a fishy smell. This smell can largely be removed by rinsing – the noodles themselves do not taste fishy. The shirataki noodles texture is a little gelatinous, the taste is pretty neutral. Visually they really look like “real noodles.” There are shirataki noodles they are augmented, for example, with tofu. This variation is even more like “real noodles” in look, texture & taste, however tofu adds some calories & carbs.
Soluble fiber, such as glucomannan is present in the konjac yam plant & shirataki noodles. Consumption of soluble fiber is desirable with health benefits, however it may be associated with bloating, gas, and mild diarrhea.
